On its own, it’s a bit spicy, but turning it into a ginger syrup makes it both sweet and versatile. Plus, this warming root supports circulation and immunity, making it a perfect companion for chilly days.

Ingredients

⅓ cup fresh ginger root (roughly chopped)

4 cups water

1 cup raw honey
Directions
Combine ingredients: Place the sliced ginger and water in a small saucepan and bring it to a gentle boil over medium heat.
Simmer slowly: Lower the heat and let the mixture simmer for 30 to 45 minutes. Allow the liquid to reduce to about 1 cup — keeping the lid slightly ajar so some steam can escape.
Strain and adjust: Remove from heat and strain out the ginger pieces. Pour the warm infusion into a heat-safe glass jar (a Mason jar works perfectly). If you have more than 1 cup, continue simmering until reduced. If it’s less, top it up with a little hot water to make 1 full cup.
Sweeten: Stir in the raw honey until fully dissolved.
Store: Keep your homemade ginger syrup in the refrigerator for up to 2 weeks, or freeze it for longer storage.

This syrup is very thin. If you want a thicker syrup you can simmer the honey with the ginger, but then it won’t be raw.
