This tasty latte is made with just four simple ingredients. Start with high-quality ceremonial grade matcha powder, which is finely ground green tea leaves packed with antioxidants and a gentle amount of caffeine. Add chamomile tea, known for its sweet, floral flavor, made from dried chamomile flowers—either loose leaf or tea bags work well. Use any creamy plant-based milk you like, such as cashew, oat, almond, or coconut milk, to create a smooth texture. Finally, sweeten to your taste with natural options like maple syrup or agave for the perfect balance.

Ingredients

1 tablespoon loose leaf chamomile tea (or 1 chamomile tea bag)

1 teaspoon ceremonial grade matcha powder

1-2 teaspoons grade A maple syrup or agave (or to taste)

1 cup (240 ml) non-dairy milk
Directions
Brew the Chamomile “Concentrate”: Bring ½ (120 ml) cup of water to a boil; add the chamomile tea to a teapot or large glass, add the water, cover, and steep for 5 minutes. Place in the fridge to let cool for at least 15 minutes, preferably overnight (Note: this makes enough tea for 2 lattes)
Make the Matcha: Sift 1 teaspoon of matcha powder into a medium bowl. Heat water to 180ºF (82ºC) in an electric kettle or in a small saucepan on the stovetop. Add a small amount of water and whisk vigorously with a bamboo whisk (chasen) until dissolved. Then, add in an additional 1/4 cup (60 ml) of water to the bowl and whisk again, in a W motion, until the matcha is frothy.
Combine: add around ~ 1 cup of ice to a glass, then pour 1/4 cup (60 ml) of the chamomile “concentrate” and the maple syrup over the ice. Mix well with a spoon or straw, then pour in the matcha. Top off the latte with as much non-dairy milk as desired and stir again. Add additional sweetener to taste if necessary, then serve immediately.
Recipe Note
Blender Version: if you don’t have a matcha whisk, you can easily make this recipe in a blender as well! Sift the matcha into the blender and add 1/4 cup of hot water and blend, then add in the chilled tea, maple syrup, and milk and blend again. Pour over ice and serve immediately.
Matcha Powder: I recommend using a ceremonial grade matcha powder, which is of higher quality and has a better flavor. I personally purchase my matcha from Ippodo Tea.
